I love eating polenta. I first made it 2 years ago from a cookbook my mother-in-law gave me. It's something like grits and something like oatmeal and I think it would be great for breakfast with a fried egg, lunch with cheese and a little tomato sauce, or dinner with some veggies or sausage. It's filling, cheap, way low-cal, and sufficiently impressive for a dinner party. Why didn't I know about this in college?
Do this for 4 servings:
Bring 4.5 c of water to a boil.
Add 0.75 T salt
Add 1 c of yellow cornmeal, whisking as you do until all appears very smooth
Turn heat down to a 1 or 2 on a 10 level stove. If the polenta is bubbling, stir it until it chills out.
Cover. Walk away. Come back in an hour and eat.
If you have leftovers, spread them about 1" deep in a lightly greased dish, cover, and leave in the fridge. You can later slice this and bake/grill little cakes to be drizzled with olive oil.
